Preheat the grill to medium-high heat. 10 minutes prep | |
| Season chicken breasts with salt, pepper, and olive oil. Grill for 6-8 minutes per side or until cooked through. Let them rest for a few minutes, then slice. 15 minutes cook |
| In a salad bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion. 5 minutes prep |
| Add the sliced grilled chicken to the salad. Drizzle with balsamic vinaigrette and toss well. 2 minutes prep |
